It introduces the mediaeval recipe as a genre (their history, compilation, and transmission), and discusses their reliability as sources. The most important sources are introduced individually, with detailed descriptions and extracts. Finally, this book contains a catalogue of more than 400 manuscripts that contain such technical texts, many of them largely unknown. For all the manuscripts a full bibliography of published editions and translations is included. |
